GLACIER BAY OYSTERS

Glacier Bay Oysters are packed in pine boxes and there shells are darker, almost black with orange which is why we choose these with Halloween around the corner. These darker shells are characteristic of oysters from this New Brunswick area.

  • Specie: Crassostrea virginica

  • Origin: Northumberland, New Brunswick, Canada

  • Farmed: 4 to 5 years

  • Average Size: 3 inches

  • Available: Year-round

FLAVOR PROFILE

Moderately salty with a clean finish. Its’ soft and plump flesh, presents a vivid, well defined flavor, with subtle fruity pear-like overtones. In a word, very fresh and only for aficionados.

BRINE INTENSITY

Medium

GROWOUT METHOD

Oysters can filter up to 300 liters of water a day - the marine habitat where they come from and its concentration in phytoplankton are thus important factors. Glacier Bay oysters grow slowly in a nutrient-rich environment and mature for about 7 years suspended and rocked by the bay's water.
